Private guided morning in Alberobello: the Rione Monti district, the Trullo Sovrano, and the unique trullo-built Church of St. Anthony. Lunch at a working masseria in Locorotondo, with views over the valley's celebrated whitewashed hilltop towns. Return to Borgo Egnazia for an afternoon at Vair, the 17,000 sq ft spa.

Your one round, and it is a memorable one. San Domenico Golf Club sits on the Adriatic coastline immediately adjacent to the Borgo Egnazia property — a links-style championship course designed by European Golf Design that has hosted the Acaya Open and multiple Challenge Tour events. The signature stretch from holes 14 to 18 plays directly along the sea, with the Adriatic in view from every shot. Afternoon at La Cala — Borgo Egnazia's private beach club, with cabanas on the rocks and the calmest swimming water on this coast.
The Adriatic Coast
Polignano a Mare & Monopoli
A coast day. Twenty minutes north to Polignano a Mare — the limestone cliff town built directly atop sea caves, with the historic centre's whitewashed alleys ending abruptly at hundred-foot drops to the Adriatic. Private boat hour around the cliffs and into the famous Lama Monachile cove. Lunch at Grotta Palazzese, the cave restaurant carved into the cliff itself — one of the most photographed dining rooms in Italy. Afternoon walking tour of Monopoli, the working harbour town just south, with its 16th-century Castello and Saturday fish market.
Salento · Lecce
The Florence of the South
Ninety minutes south through the Salento peninsula to Lecce — the city often called the Florence of the South, built almost entirely from honey-coloured Lecce stone and rebuilt in the 17th century in an exuberant local Baroque all its own. Private guided tour of the Basilica di Santa Croce, the Piazza del Duomo, and the Roman amphitheatre below the modern square. Lunch at a Salento trattoria — orecchiette with cime di rapa, raw red prawns from Gallipoli, a glass of Negroamaro. Return to Borgo Egnazia for a quiet evening.

Cooking Class & Wine Tasting
A full day on the masseria. Morning: a private cooking class with one of the Borgo Egnazia chefs — orecchiette by hand, focaccia barese, an Adriatic seafood primo, and the burrata-and-tomato course that justifies the trip on its own. Afternoon: a private tasting with a sommelier of Puglia's two great red varietals — Primitivo di Manduria from the deep south and Negroamaro from the Salento — alongside the elegant whites of the Itria Valley. Farewell dinner at Borgo Egnazia, with the kitchen sending out a final tasting menu.
